I've done some pretty cool things in NYC: Walk the Brooklyn Bridge, Central Park, Walk through Times Square, Tavern on the Green, Spice Market in the Meat Packing District. What else and why? What are the coolest / funest things to do in New York City?
Except for the Brooklyn Bridge, all the activities you've listed are in Manhattan.
Brooklyn - Take the 2,3,4,5 to Borough Hall (or the R to Court St.) and walk west along Remsen Street until you hit the Promenade. An unforgettable view of Manhattan! Also, Prospect Park is beautiful - think of Central Park without the tourists. The Coney Island boardwalk is fun, especially if you like seeing tons of different cultures. Check out Chinatown in Brooklyn in Bensonhurst, the Irish and Arab communities of Bay Ridge (amazing food!). Red Hook has industrial charm. Williamsburg, especially along Bedford Ave. is great - very hipster.
Queens - Astoria is very cool. Great Greek restaurants and new Egyptian ones, as well. Flushing is home to NYC's third Chinatown, and is a great market for Chinese, Korean, and other goods.
Bronx - City Island is great, feels like a touch of New England in NYC with nice seafood. Take the 6 train to the last stop (Pelham Bay Park) and then switch to a bus that says "City Island." Riverdale is pretty, though a bit sleepy.
Staten Island - don't know much about it, sorry!
Manhattan - Go to the Cloisters. If you like Medieval Art, great! If not, it's still on a beautiful space. Take the A train to 190th St., then head up the hill and walk to the museum in Fort Tryon Park. You'll have a great view on Upper Manhattan and the Bronx to the east, and New Jersey and the Palisades to your west. What are the coolest / funest things to do in New York City?

Well if you are older enough, (+21) you may go partying or raving whatever you want to call it. China club should be fun and it's just off 42nd st.
If you like to laugh, the Laugh Factory in Times Square is a riot. It's fairly inexpensive, and it's a great place to go with some friends.
